Squash Pansit with Malunggay
Ingredients:
4-5 C APF
1 C squash (steamed then mashed)
2 tbsp fish sauce or patis
2 tbsp cooking oil
1 pc egg
2 tbsp lye
Procedure:
1. Beat egg
2. Mix with fish sauce, oil , and lye
3. Mix dry and liquid ingredients
4. Knead flour into smooth and even mass.
5. Roll the kneader cutter into the dough until
it becomes 0.8 mm thick. If kneader cutter
is not available, bottle and knife can be used.
6. Sprinkle both sidesof dough with flour to avoid
sticking to the kneader or bottle.
7. Cut into strips.
8. Cut the strips in a strainer
9. Put in boiling water for a few seconds until
the strips floats.
10. Immediately remove the strainer from the pan
11. Wash with tap water.
